Coconut Milk Recipe

Our family has decided to completely phase dairy (cow’s) milk out of our diets, so I decided to find oodles of different alternative milk recipes, make them all up, and let everyone in the family give them a try. We then rated them on a scale of 1 to 5, and the top 2-3 will be our household staples. I did not make almond milk this go round, because I’ve made that in that in the past and knew that we all liked it. I wanted to branch out and try some other options this time. From left to right: Cashew Milk, Coconut Milk, Oat Milk, Rice Milk

 

Coconut Milk

1 cup unsweetened coconut flakes

3 cups boiling water

1 tsp vanilla

3 dates (more or less to suit your tastes)

 

Place all ingredients (except 1 cup boiling water) into a Vita Mix blender and blend thoroughly. Carefully pour into a sieve or cheesecloth to strain. Place remaining coconut back into Vita Mix, and pour remaining 1 cup boiling hot water in with the coconut. Blend thoroughly, and carefully pour into sieve or cheesecloth to strain. Place all coconut milk into your favorite jar or pitcher, refrigerate until completely chilled and enjoy!
