Dairy Free Cinnamon Vanilla Chia Pudding

I got the idea for this recipe from another blog, and decided to adapt it to suit my family’s own needs. This recipe is so super easy, since you can make it the night before, allowing it to set up overnight. I made the “whipped cream” up this morning, and everyone enjoyed it at lunch time. This is a super wonderful recipe to take to family gatherings and potlucks, especially for those who want to bring something nice, but don’t have oodles of time to spend making it. It’s also easy to adapt for larger families/crowds, as I did, making a double batch.

Dairy Free Cinnamon Vanilla Chia Pudding

2 cups homemade rice milk (here’s the link to my rice milk recipe) (I did thin the milk out some before making this recipe.)

2/3 cup chia seeds

2 teaspoons vanilla extract

2 dashes of cinnamon

whipped topping of choice (the healthiest option is to beat coconut milk cream (the creamy stuff on top of the coconut milk) at a high speed, until it sets up.)

fruit/s of choice for the top

Mix rice milk, vanilla, cinnamon, and chia seeds together well, being sure that all chia seeds are well incorporated. I let mine set up overnight, and made some yummy whipped topping to go on top of it. You can also add raspberries, blackberries, strawberries, etc., to go on top of it. Not only does it make it look prettier, it also adds an extra deliciousness to it too!

P.S. This recipe is indicative of the double batch. Please divide in half to serve a smaller family or single person.
